I don’t know about you but in my opinion there is nothing like a big bowl of warm oatmeal during the cold autumn and winter months. It’s like getting a huge and warm hug from the inside. This banana oatmeal with caramel (and lots of cinnamon!) is just perfect. I think it might be my favourite oatmeal this year. I love how sweet and creamy it is.

This oatmeal is super easy to make. It literally takes less than 10 minutes which is a huge plus for me as I don’t usually have much of time in the morning. And the time I do have I don’t really feel like spending on cooking a fancy breakfast. The caramel is also really easy to make – basically you just cook a can of condensed milk for three hours and then you got the most delicious caramel. Or you could just buy a can of dulce de leche. Totally your call.
- 1/2 cup oats
- 1 cup vanilla soy milk (or milk of your choice)
- 1 ripe banana, mashed
- 1 big tsp caramel*
- *I either make my own or simply buy a glass of premade dulche de leche. To make your own all you need to do is boil a can of condensed for 3 hours and let it sit for 1 hour before you open the can. Then you have the most delicious caramel!
- Mix oats, the mashed banana, and milk in a pot. Let it simmer for 5-10 minutes until it becomes thick and creamy.
- Pour the oatmeal into a bowl and top with caramel and cinnamon.
